Black Fruit Cake

Black Fruit Cake, like “Sorrel” is a  pleasurable  traditional cake enjoyed by many all over the Caribbean.  One has to take their time when making this particular cake because the fruits have to be soaked in liquor for a few weeks.  The longer the fruits soaked, the better the cake taste.  When Cake is finished baking, a cup of Cream Sherry or Rum should be poured all over it.  The word "Black" is used to described the cake because of the burnt sugar which give the cake its dark appearance.  Very delicious when eaten with a glass of “Sorrel” or “Rum Punch.
